Classic Egg Salad Sandwich Recipe – Easy and Healthy

Instead of grabbing fast food for lunch, here’s a healthy alternative. This is my easy Egg Salad Sandwich Recipe.

So, what do I put in my egg salad? First, I hard boil 2 eggs. Everyone has their own way to hard boil an egg. How do I hard boil eggs? First I place my eggs in a small pot and almost cover them with water. On the stove, I bring the pot to a boil uncovered. Once the pot boils I keep the setting on high for 10 minutes. After 10 minutes I dump out the hot water, shuffle the pot a little to break up the shells some, and fill the pot (with the eggs) back up with icy, cold water. I let it sit there a while to cool off. Then, when the eggs are cool they are easy to peel.
I use an egg slicer to slice the eggs and put them in a small bowl. At this time, you can choose whether to include the yolks or now. I usually keep one yolk in and give the other to my dog and cat to share.
What To Put in Your Egg Salad
Then I add the seasoning. I like salt, pepper, a teaspoon of mustard, and a teaspoon of Miracle Whip. You can choose any type of mustard or mayonnaise. Mix it up and voila.
I add the egg salad to wheat bread and top with some type of greens like lettuce or spinach.
How to Pack Your Egg Salad Sandwich
If you plan on bringing this to work or school I suggest keeping the egg salad and bread separate until you are ready to eat lunch. The bread could become soggy if the egg salad is on it too long.
