Breakfast tacos are super popular here in Austin. Since they vary so much, they may contain as little as just egg and cheese to as much as various meats, salsas, and veggies.

I like to make my breakfast tacos healthy. Although, one problem with tacos is they can be messy. There’s an art to rolling a perfect taco. But, if found a trick. If you melt the cheese everything sticks together nicely and then you don’t even have to fold up the ends.
For my Easy, No Mess Breakfast Tacos Recipe I used a tortilla with eggs, cheese, and spinach. First lay down a tortilla (for a healthier option, use wheat or veggie tortillas). Then, place cheese on top. Cook egg in a skillet like an omelet, but don’t fold it. If you use one egg, then you don’t even need to flip it. Just wait for the egg to bubble and carefully, with 2 spatulas, place it on top of the cheese. Right away add whatever other toppings you wish including more cheese to help the topping stick. Finally, roll it up and enjoy!
Depending on the ingredients, you can even freeze these for mornings you need a fast breakfast.
